Abstract

Cette étude présente la diversité des relations observables entre opérateurs des filières blé-farine-pain biologique d'Occitanie. Elle souligne les effets inégalement ressentis de la baisse de la demande en pain bio et met en avant l'existence de relations plus coopératives au sein des filières territorialisées. • En Occitanie, la production de blé tendre biologique est très excédentaire. • Les relations entre agriculteurs et meuniers et entre meuniers et les boulangers prennent des formes variées selon les filières. • Les relations de coopération entre l'ensemble des acteurs des filières sont l'exception plutôt que la règle, mais sept filières céréalières territorialisées peuvent néanmoins être identifiées dans la région.
