Abstract

De l'étude effectuée, il ressort que : dans l'ensemble spécialisé, la stabilité du système dépend, essentiellement, du niveau moyen de la demande par rapport à la capacité de production. Dans l'ensemble polyvalent, au niveau de la transformation des produits, le lait est un élément stabilisateur extrêmement important. Il rend inélastique par rapport aux prix les productions qui lui sont assiociées;
