Abstract

Les labels apposés sur les produits alimentaires améliorent leur qualité perçue. Notre étude s'intéresse à un label renseignant le consommateur sur le mode de gouvernance de l'entreprise : un label coopératif. Quatre TAI permettent de tester l'impact du label sur les inférences en matière de goût et de salubrité de consommateurs français et québécois. Les résultats montrent que la mention « produit par une coopérative » renforce les associations à la salubrité et au bon goût dans le cas de produits artisanaux. Au contraire, les produits industriels pâtissent de la mention « coopérative ».
