Abstract

« Cet ouvrage a une double dimension. Il s'agit d'abord d'un livre de voyage, les voyages du sucre dans le temps et dans l'espace. L'histoire et la géographie du sucre sont celles de la mondialisation. Le livre nous fait explorer les terres du sucre, de la Caraïbe au Brésil, naviguer de l'Océan indien à l'Inde et jusqu'en Australie. Il décrit la production, les marchés, la consommation du sucre, les modes et les défaveurs. Il nous fait remonter le cours de l'histoire, depuis les plantations sucrières médiévales des îles méditerranéennes jusqu'aux modes contemporains d'usage et de production du sucre (et aujourd'hui de l'éthanol) en passant par l'apogée et la disparition du sucre-esclave. Ce livre est également une réflexion sur la perpétuation d'un mode de production dans la très longue durée, sur sa résilience. « Sucre amer », selon le titre d'un livre et d'un film. En effet, l'esclavagisme a accompagné le sucre depuis le XIIe siècle jusqu'à la fin du XIXe siècle. Si le système a été détruit de l'intérieur et de l'extérieur, il a laissé longtemps plus que des traces, des stigmates. Aujourd'hui encore les conditions de production du sucre ou de l'éthanol (par exemple au Brésil et dans la République dominicaine) n'en sont pas libérées. »
