Abstract

This communication is based on the case study of the territorial beef sector built around the manufacturing workshop "From Earth to Plate". Through the analysis of the conditions of emergence, development and sustainability of this sector, the objective is to understand how territorialized food sectors constitute a real issue of territorial development in terms of planning and governance. In this perspective, we will rely on the work of Noël et al. (2018, 2019) who propose a multimodal analysis grid crossing the notions of performance and proximity inherent in territorialized sectors. The study of the collective organization "From Earth to Plate" shows that the social or societal impact is remarkable while the economic performance is to be put into perspective. Thinking about the coordination of the different territorial agri-food sectors to develop and govern the territory is therefore an important issue.
