Dans les cantines, la loi EGalim n’a pas atteint ses objectifs

Abstract

Depuis le début de la révolte des agriculteurs, la loi EGalim est souvent évoquée comme l'une des causes de leur mal-être : les industriels et la grande distribution ne respecteraient pas les règles fixées par ce texte en matière de fixation des prix. Mais on oublie l'autre partie de la loi EGalim, celle qui engage l'Etat à travers l'augmentation de la part des produits alimentaires durables dans la restauration collective publique. Sur ce sujet, l'Etat a fixé plusieurs objectifs qui sont loin d'être atteints, faute d'argent public. Un des leviers pour aider les agriculteurs serait de réorienter certaines dépenses publiques afin de permettre aux collectivités d'acheter des produits durables et locaux.
