Abstract

La viande, les produits laitiers et les autres produits animaux occupent une place centrale dans de nombreuses cultures africaines. Cependant, les modes d'alimentation et d'approvisionnement sont en plein bouleversement, notamment dans les villes : apparition de nouveaux produits ; hausse du pouvoir d'achat ; importations croissantes ; diversification des usages… Quel est l'impact de ces transformations sur les systèmes d'élevage ? Les pasteurs et les agropasteurs peuvent-ils saisir les opportunités offertes par l'essor de l'économie de marché ? Quels sont les nouveaux modes d'élevage agro- pastoral en réponse aux mutations des économies africaines ? Pour répondre à ces questions, ce chapitre présente d'abord les raisons qui expliquent la croissance de la demande dans les pays d'Afrique intertropicale. Il montre ensuite que les élevages pastoraux participent à l'approvisionnement des marchés en viande grâce à des circuits très dynamiques, et qu'ils alimentent aussi des réseaux d'exportation. Puis, le chapitre souligne que les élevages pastoraux et agropastoraux fournissent la majeure partie des produits laitiers consommés dans ces pays.
