Abstract

À l'heure où les réseaux sociaux façonnent les pratiques culinaires quotidiennes, où TikTok, Instagram ou YouTube deviennent des sources d'inspiration majeures pour les apprenants pâtissiers et cuisiniers, une question se pose : à quoi servent encore les livres de cuisine ? Pourquoi continuer à enseigner à partir de ce support figé, à l'apparence parfois austère, quand l'image animée, immersive et virale semble avoir pris le relais dans l'apprentissage du geste culinaire et de la démarche créative ? L'évolution des pratiques éditoriales, y compris dans l'enseignement professionnel, accentue la dynamique d'abandon du livre. De nombreuses régions optent désormais pour le tout numérique, reléguant l'ouvrage imprimé au rang d'archive. Cette communication propose de réinterroger la place du livre de cuisine imprimé, à la lumière du contenu de La physiologie du goût, œuvre de Brillat-Savarin.
