Abstract

El consumo de carne está en el centro del debate científico y político. Numerosos estudios han demostrado que una dieta con menos carne reduce el riesgo de enfermedades crónicas y disminuye la huella ecológica. Sin embargo, el impacto de esta transición alimentaria en toda la población aún no ha sido completamente explorado.
