Abstract

Quand Strabucks, Zara ou McDonald sont présents partout dans le monde et quand les grands groupes hôteliers sont mondialisés offrant des prestations standardisées aux touristes, que reste-t-il aux destinations pour se singulariser ? L'inscription par l'UNESCO du repas gastronomique des Français et celle du Fest-Noz sur la liste représentative du patrimoine culturel immatériel de l'humanité ont mis en lumière les enjeux de ces ressources pour le tourisme. Les territoires tendent à se singulariser par leurs atouts locaux identitaires, dont la cuisine ou la gastronomie locale, les savoir-faire liés à l'artisanat, les arts techniques et traditions, les manifestations folkloriques ... mais aussi par la mise en scène d'atmosphères locales, l'authenticité, l'image ou la virtualité. Autrement dit tous ces éléments qui constituent "l'immatériel touristique", dont les auteurs de cet ouvrage montrent l'intérêt stratégique pour développer un tourisme de qualité.
