Abstract

Les CCAP se développent depuis de nombreuses années pour répondre aux besoins croissants des consommateurs de produits locaux. La logistique de ces CCAP est spécifique pour plusieurs raisons : quantité faible, courte distance, etc. Elle est d'ailleurs souvent oubliée par les producteurs qui l'assurent eux-mêmes alors qu'ils n'ont pas ou peu de connaissances dans le transport ou le stockage. Notre recherche se propose d'étudier la structuration et l'organisation logistique des CCAP en prenant en compte tous les acteurs, producteurs, intermédiaires et institutionnels. L'objectif est de saisir la variété des CCAP, les enjeux associés et comprendre les choix logistiques réalisés. Il s'agit plus particulièrement à l'aide des dimensions du concept de proximité de mettre en évidence les modes de coopérations existants entre les acteurs.
