Abstract
Food systems are complex objects due to the diversity of the products necessary to meet the food needs of the population in a given space and the complexity of flows and supply networks. Several methodologies for quantifying food consumption and local agricultural production in eleven French urban areas have been proposed at the level of each of the urban areas studied as part of the FRUGAL project. By integrating elements related to food distribution in short and local chains, it is based on these methods to recall the importance of the socio-cultural determinants of consumption and the necessary consideration of territorial contexts to understand food systems.
