Abstract

Through a bibliographic review, then a quantitative survey online with a sample of 1005 representative persons of the French population, this exploratory study focuses on the consumption of horse meat and on the social representations of horses. Results show the idealization and anthropomorphization of horses, of utmost importance for non-consumers of horse meat who say not eating horse meat because of their love for this animal. Nevertheless findings highlight the existence of market opportunities for this product.
