Structures de production et inflation dans l'agriculture et les industries alimentaires

Abstract

Le caractère irrégulier des flux et, d'une manière générale, les incertitudes de l'environnement rendent difficile l'adéquation des structures de production à la demande. Très souvent, les opérations de restructuration réalisées ou prévues ne correspondent qu'imparfaitement aux besoins et se traduisent par un gaspillage du capital disponible et un déséquilibre offre-demande. L'étude de ce problème dans les systèmes que constituent les exploitations agricoles et les entreprises qui transforment leurs produits montre que l'effet d'ensemble des décisions prises par des centres interdépendants peuvent être préjudiciables au bon fonctionnement de ces systèmes et engendrer des déséquilibres qui jouent un rôle essentiel dans la genèse de l'inflation. Ces déséquilibres sont aggravés par le comportement d'agents économiques soucieux de produire toujours plus vite dans des installations toujours plus grandes.
