Abstract

Peut-on remédier aux problèmes de santé liés à l'obésité et à la surcharge pondérale en mettant en oeuvre des politique de prix des aliments ? La recherche présentée ici s'interroge sur les effets d'une politique de taxation-subvention des aliments en fonction de leur qualité nutritionnelle. Les investigations reposent sur des expériences menées auprès de femmes de milieu défavorisé pour lesquelles ces problèmes sont exacerbés. Les résultats montrent que des politiques de prix, telle que la subvention des fruits et légumes et la taxe sur les produits gras et sucrés, sont efficaces dans la mesure où elles permettent une amélioration du régime alimentaire. Cependant, elles conduisent à renforcer les inégalités sociales.
