Abstract

In this article we model the food demand with nutritional claims. Our goal is to answer questions about the effectiveness of using these instruments and equal access to populations. We consider the market for breakfast using the TNS Worldpanel-2004 data. The results show that products with nutritional claims seem to reach households at risk of health. But the substitution relationship with other foods suggest some limits on the effectiveness of these devices. A micro-simulation nutrition policies shows that a tax on products with low nutritional characteristics has ambiguous effects on the overall consumption of nutrients.
