Abstract

Cet ouvrage traite des défis et solutions pour concilier l'élevage et la protection de l'environnement. Avec une approche multicritère, il apporte des bases scientifiques, techniques et méthodologiques pour appréhender les systèmes d'élevage et leurs évolutions. Il est construit autour de trois étapes essentielles : "mesurer" les flux environnementaux liés aux élevages ; "évaluer" les dommages et les bénéfices environnementaux ; "agir" pour améliorer le bilan environnemental des élevages. Les chapitres s'organisent de manière complémentaire. Certains à visée introductive soulignent les enjeux, d'autres synthétisent les connaissances actuelles en présentant les outils opérationnels mobilisables, et enfin des focus sont réalisés sur des questions méthodologiques ou des sujets émergents. L'objectif de l'ouvrage est de mieux comprendre les enjeux environnementaux des élevages et de proposer des voies d'amélioration. Il s'adresse aux enseignants, agents de développement, conseillers, instances publiques, décideurs et professionnels qui s'intéressent aux systèmes de production animale et à leurs performances environnementales.
