Abstract

L'évolution de la consommation alimentaire est marquée ces dernières années par le passage d'une logique de marché à une logique de clientèle, donnant lieu à une véritable débanalisation des produits et une cible de consommateurs plus composite. Celle-ci s'effectue pour enrayer une part des dépenses de consommation alimentaires qui est chaque année en régression contrairement aux autres postes budgétaires (20 % des dépenses budgétaires en valeur relative en 2000, 15,6 % en 2005, 14,4 % prévus en 2010). Cette situation pousse les industriels à incorporer davantage de service aux produits sur des créneaux émergents ; nutritionnels, fonctionnels et de service. :
