Abstract

L'ouvrage retrace l'histoire d'Émile Ryckeboer, le fondateur de Florette et de la quatrième gamme, c'est- à-dire du concept de salades et légumes frais vendus en sachets. Ce n'est pas une oeuvre scientifique mais un livre qui retrace une aventure entrepreneuriale. L'ouvrage est très agréable à lire. C'est d'autant plus le cas qu'il rappelle de nombreuses histoires de paysans flamands venus en France entre les deux guerres et qui usaient de leur savoir-faire en matière de polders pour créer des fermes de toutes pièces. Émile Ryckeboer va cependant plus loin que la création d'une ferme : il est à l'origine d'une multinationale agroalimentaire. C'est ce qui en fait un agri entrepreneur ; c'est aussi ce qui légitime ce compte rendu alors que le monde agricole a besoin de modèles pour construire l'agriculture de demain.
