Abstract

L'élaboration de stratégies alimentaires par les collectivités a été consacrée par la procédure de Projet Alimentaire Territorial. On constate cependant qu'elles ne mobilisent qu'un nombre restreint de compétences. En particulier l'organisation de l'approvisionnement local des restaurations scolaires devient l'élément majeur, voire unique, de leurs actions. Par une perspective multi-niveaux, nous interprétons cette évolution comme le résultat d'une pression du régime socio-technique dominant pour prendre place dans des niches dont l'essor est soutenu par l'évolution des pratiques alimentaires.
