Abstract

La comparaison de données structurelles et comptables d'exploitations pratiquant les CP avec l'ensemble des exploitations agricoles en bovin viande en Limousin permet de constater une meilleure performance financière. Plusieurs enquêtes permettent de tester l'hypothèse que cette meilleure performance provient des capacités d'accès aux consommateurs. En particulier, la gentrification rurale peut faciliter le rapprochement entre producteurs et consommateurs.
