Органолептическая Оценка Плодов Унаби До И После Хранения

Abstract

Оценка лежкости и изучение изменения вкусовых оказателей ряда сортов унаби при различных способах хранения Изучались плоды унаби сортов Арзу,Зогал,Насими,Ордубади, Улдуз, хранившихся при +2°С, свежезамороженных при -30°С и замороженных при -18 °С и хранившихся в течение 9 месяцев. Проводилась оценка изменений внешнего вида и вкуса в процессе хранения. Свежие и замороженные плоды унаби превосходили хранившиеся при +2°С по внешнему виду, вкусу и степенью сохранности биологически активных веществ.
