Abstract

En este documento se resume el proceso de fortalecimiento de la cadena de valor de embutidos y otras conservas de carne de cerdo en México, cuyo objetivo principal es promover la incorporación de pequeñas empresas y productores rurales en cadenas de valor. El estudio fue realizado a solicitud de la Secretaría de Economía del gobierno mexicano en su papel de coordinadora de la Mesa de Trabajo de Desarrollo de Cadenas Productivas del Consejo Consultivo Empresarial para el Crecimiento Económico de México (CCECEM), instancia que agrupa a representantes de los sectores público y privado.
