Análisis de la cadena logística de la yuca en Costa Rica

Abstract

La yuca es un tubérculo de enorme importancia alimenticia con la capacidad para crecer en suelos ácidos, de escasa fertilidad, con precipitaciones esporádicas o largos períodos de sequía. Este tipo de cultivos está presente en prácticamente todos los países de América Central y es una actividad agrícola donde participan activamente pequeños y medianos productores, lo que reviste especial importancia para el proyecto. El análisis de la cadena logística de la yuca aquí presentada busca comprender el comportamiento de los mercados, la participación de los diferentes actores involucrados a lo largo y ancho de la cadena y los constreñimientos críticos que afecta el desarrollo sostenible de los diversos sectores y actores involucrados.
