Abstract

(English) Pizza has been a well-known food in Naples since at least the 16th century, but spread almost around the whole world in the 20th century, especially after the Second World War. A dish with archaic roots that has become the symbol of modernity, pizza has transcended history, as it has geographical and cultural barriers. Nonetheless, this cross-border food product has not eliminated borders ; its adoption is always accompanied by a reappropriation process where it is imbued with aspects of the local culture and is integrated with ease into a pre-existing set of rules. Once this re-appropriation process is achieved, with its unique flexibility allowing it to relinquish its hold, pizza then creates new frontiers for other groups than those which developed it and worked with it. Pizza is a cultural object, providing a particularly interesting example of how diversity is maintained and is renewed in the flux of borrowing, and at the same time makes it possible to examine the scenarios of cultural and culinary homogenisation, or the breakdown of frontiers which the globalisation process brings about. It is a point in fact that it is precisely pizza that, more often than is its turn, is used to indicate the erosion of cultural differences. (Italiano) Attestata almeno dal XVI secolo a Napoli, la pizza ha conosciuto nel XX secolo e soprattutto dopo la Seconda Guerra mondiale una diffusione quasi universale. Cibo dalle radici arcaiche diventato stendardo della modernità, la pizza ha attraversato sia la storia sia le aree geografiche e culturali. Tuttavia questo a-tipico commestibile transfrontaliero non contrassegna l’offuscamento delle frontiere: la sua adozione si accompagna sempre ad un processo di riappropriazione nel corso del quale viene ad essere intriso di tratti di cultura locale e si integra armoniosamente in un sistema di regole a lui preesistenti. Al termine di questo processo di riappropriazione nel quale la malleabilità inedita della pizza lascia una impronta il cibo costituisce di nuovo una frontiera per ogni gruppo altro da quello che lo ha lavorato e rimodellato. La pizza è un oggetto culturale che offre un esempio particolarmente interessante del modo in cui la diversità si conserva e si rinnova nel flusso dei prestiti, e consente allo stesso tempo di rivisitare gli scenari della omogeneizzazione culturale e culinaria o la cancellazione delle frontiere che indurre il processo di globalizzazione. Il fatto rilevante, bisogna sottolinearlo, è che la pizza che – il più delle volte – viene utilizzata a sua volta per testimoniare dell’erosione delle specificità culturali.
