Abstract
In an open competitive environment, businesses in various Quebec bio-food sectors are increasingly collaborating to develop value chains that enable them to adapt more quickly to changes in demand, share strategic information, carry out innovation activities, optimise processes, reduce costs and share risk. Value chains can help structure certain sectors and offer their members the ability to differentiate their products from those of their competitors. Based on a literature review, interviews and consultations with experts, the authors analyze the factors influencing the creation, development, and performance of Quebec's agri-food value chains. Their analyses reveal that the concept of added value is unevenly understood, highlighting a need for training to standardize this notion. The study identifies five key factors for developing value chains: coordination and collaboration, market orientation, innovation, efficiency, and public policies. Public policies play a key role in supporting organization and flexibility, innovation, consumer satisfaction, and competitiveness. Dans un contexte de concurrence ouverte, les entreprises de diverses filières bioalimentaires québécoises collaborent de plus en plus afin de développer des chaînes de valeur leur permettant de s’adapter plus rapidement aux changements de la demande, de partager de l’information stratégique, de réaliser des activités d’innovations, d’optimiser des procédés, de réduire les coûts ou encore de partager le risque. Les chaînes de valeur peuvent permettre de structurer certaines filières en plus d’offrir à leurs membres la capacité de distinguer leur produit face à leurs concurrents. À partir d’une revue de la littérature, d’entretiens et de consultations auprès d’experts, les auteurs proposent une analyse des facteurs ayant un impact sur la création, le développement et les performances des chaînes de valeur bioalimentaires québécoises. Leurs analyses suggèrent que le concept de valeur ajoutée est inégalement compris, soulignant un besoin de formation pour harmoniser cette notion. L’étude distingue cinq facteurs clés pour le développement des chaînes de valeur : la coordination et la collaboration, l’orientation marché, l’innovation, l’efficience et les politiques publiques. Ces dernières ont un rôle crucial à jouer pour influencer l’organisation et la flexibilité des chaînes, l'innovation, la satisfaction des consommateurs et la compétitivité.
