Características del cultivo del cacao en Santander

Abstract

El cacao es un sistema completo de cultivo que requiere la utilización de mano de obra intensiva y configura una explotación típica de economía campesina, con un desarrollo lento en el caso colombiano, debido a factores de orden social y económico. Colombia se constituye en un país productor y consumidor, con un valor agregado importante representado en empresas que transforman el producto con altos estándares de calidad y tecnología de punta. El cacao es producido por un buen número de países en el mundo, aunque se concentra especialmente en las zonas tropicales, en África del Oeste, Asia, Sur y Centro América. En Colombia, el primer productor ha sido el departamento de Santander, especialmente en la zona de los municipios de El Carmen y San Vicente de Chucurí, característicos no solo por la cantidad, sino también por la calidad. También se suman otras regiones que se identifican con el cultivo en el Occidente y Cuenca del Atrato, Hoya del Río Magdalena, Valle del Cauca y Norte de Santander.
