Primeros pasos hacia la diferenciación de la producción de miel uruguaya

Abstract

El sector apícola uruguayo está fuertemente especializado en la exportación. Uruguay se encuentra habitualmente dentro de los primeros exportadores mundiales y ha exportado tradicionalmente cerca del 90% de su producción, predominantemente a granel y con baja presencia de otros productos derivados de la miel. Recientemente, el sector evidencia caídas en los niveles de rendimiento de la producción, a la vez que ha enfrentado desafíos en términos de aseguramiento de calidad y apertura de mercados que han redundado en una brecha con los precios de los principales productores mundiales. En este contexto, el presente trabajo analiza una serie de iniciativas recientes de organización del sector con el fin de construir bienes públicos y avanzar en la diferenciación de productos a partir de atributos en su producción y/o origen, fundamentalmente alrededor de la oportunidad que presenta el desarrollo de miel de eucaliptus, hoy un producto incipiente.
