Alimentació, salut i nivells de vida a la Barcelona industrial (1820-1936)

Abstract

En aquest treball s’analitza l’evolució de la dieta de la població de Barcelona entre començaments del segle XIX i l’inici de la Guerra Civil (1936), esdeveniment que interromp temporalment el procés de transformació que estava experimentant l’alimentació dels barcelonins. Dins del període estudiat, prendrem com a referència tres moments o tres talls que, segons la nostra opinió, il·lustrarien les dues primeres fases i apuntarien la tercera fase que presenta l’evolució o transformació aquí analitzades: a començaments de segle XIX, al voltant de 1860, i cap a 1930, just abans de la ruptura que suposen la ja esmentada Guerra Civil i la llarga postguerra. L’evolució de la dieta vindria determinada en cada moment i fase per un ampli ventall de factors ecològics, econòmics, legals o institucionals, polítics, tècnics i científics.
