Abstract

Excerpts from the report: The purpose of this study was to determine the effect of box type on changes in microbial counts, product and ice weight, and tare weight of boxes during storage of ice-packed fryer chickens. Both the acceptable storage temperatures of 2.2° and 4.4° C, and the abnormally high temperatures of 23.9° and 31.1° C. were included in these studies. The correlation between bacterial counts in the fluids accumulating in the boxes during storage and the counts on skin surfaces of the carcasses was also determined. In addition, information was obtained on temperature rise on the skin surface of chicken held in the boxes during exposure to high ambient temperatures.
