Yield of Nonfat Dry Milk Solids from a Unit of Milk

Abstract

Excerpts from the report Preface: The accuracy of the United States Department of Agriculture's marketing margin estimates is dependent largely on methods used in obtaining and utilizing data. For this reason part of the research on margins has been directed toward improving methods for measuring margins. That is the purpose of this report which is one of several reports on various phases of marketing margins and costs for food. In determining margins for dairy products, it is necessary to calculate the quantity of farm milk used to produce a given unit of dairy product, such as a pound of butter or a gallon of ice cream. For this calculation, conversion factors are used which represent the average amount of milk used for a unit of product. In the present report, data available to the Department of Agriculture have been analyzed to afford yield factors that will permit more accurate estimation of the amount of milk required to produce a given quantity of nonfat dry milk solids.
