Abstract

A luxustermékek közül a tapasztalati termékek kategóriájába sorolhatók az otthoni és házon kívüli étkezés egyes ételei, köztük a szarvasgombával készült ételek is. A szarvasgomba fogyasztói magatartás szorosan kapcsolódik a presztízs fogyasztói (hedonista, sznob, utánzó és hivalkodó) motivációkhoz. A fogyasztói magatartás országos reprezentatív mintán vizsgáltuk (1060 fő 16 év feletti), amelyből 113 fő szarvasgombás ételek fogyasztója. Az adatbázist faktor és klaszterelemzés segítségével értékeltük. Három fogyasztói szegmenst határoztunk meg, amelyet demográfiai tényezőkkel, fogyasztói gyakoriság adataival, valamint magatartási jellemzőkkel jellemeztünk. A szervezeti piaci beszerzési magatartást 63 db étteremből álló mintán vizsgáltuk.
