O Varejo De Frutas, Legumes E Verduras (Flv) Na Região Central Do Rio Grande Do Sul

Abstract

O presente trabalho teve como objetivo caracterizar o varejo de frutas, legumes e verduras (FLV) na região central do Rio Grande do Sul devido à importância desse setor e seus efeitos na cadeia produtiva como um todo e, em particular, para o produtor rural. Metodologicamente a pesquisa conduzida trata-se de um survey (levantamento), realizado em 11 municípios da região central do Rio Grande do Sul. Foram entrevistados 193 estabelecimentos comerciais que compuseram uma amostra de 10% do varejo da região. Concluiu-se que o varejo da região tem nas FLV uma demanda regular, já que seu panorama regional conta com 96,89% dos estabelecimentos ofertando os respectivos produtos. Um aspecto interessante é o significativo volume de determinados produtos comprados mensalmente na região: alface, tomate, alho, batata, cebola, morango e tempero-verde, dentre um rol formado por vinte produtos. As necessidades do varejo podem ser consideradas como condicionantes para toda a cadeia produtiva devido a sua posição privilegiada com o consumidor final. Neste sentido, a pesquisa evidenciou que o produtor rural deve estar apto a fornecer um produto durável, com qualidade e a preços atrativos, bem como deve ser flexível à negociação, apresentar escala de produção considerável e procurar desenvolver um mix de produto a ofertar e não se especializar em apenas um produto. Por fim, como retorno aos produtores rurais, conclui-se que as necessidades do varejo são complexas para que os produtores às atendam, porém, ações de cooperação e associação devem ser previstas na medida em que há condicionantes para acessar ao grande varejo que de forma individual são difíceis de serem alcançados. Bem como devem ser exploradas as potencialidades quanto à origem dos produtos.----------------------------------------------This work have purpose delineate the retail of fruits, vegetables and verdures (FLV) in the central region of Rio Grande do Sul because of the importance of this sector and its effect on the productive chain as a whole and in particular for the rural producer. In the methodology the search conducted it is a survey, made in 11 municipalities in the central region of Rio Grande do Sul. One hundred ninety three commercial establishments had been interviewed that had composed a sample of 10% of the retail in region. It was concluded that the retail in the region has FLV a regular demand, as its regional panorama has 96.89% of establishments offering their products. One interesting aspect is the significant volume of certain products purchased monthly in the region: lettuce, tomatoes, garlic, potatoes, onions, strawberries and seasoning-green, among a list formed by twenty products. The needs of the retail can be viewed as constraints for the whole production chain due to its privileged position with the final consumer. Accordingly, the research showed that rural producers should be able to provide a durable product, with quality and prices attractive, and must be flexible to trading, present scale of production considerably and seek to develop a mix of the product offering and is not specialize in one product. Finally, as a return to rural producers, it is concluded that the needs of the retail complex is for the producers to meet, however, shares of cooperation and association must be provided to the extent that there are limitations to access to the large retailers so that individual are difficult to be achieved. As well as the potentialities should be explored as the origin of the products.
