O Varejo De Produtos Coloniais Na Região Central Do Rio Grande Do Sul

Abstract

O presente trabalho teve como objetivo caracterizar o varejo de produtos coloniais na região central do Rio Grande do Sul face à importância desse setor e seus efeitos sobre as cadeias produtivas da região, em especial sobre o produtor rural. Metodologicamente, a pesquisa compõe-se de um survey (levantamento), realizado em 11 municípios da região central do Rio Grande do Sul. Foram aplicados questionários em 193 estabelecimentos comerciais, que compuseram uma amostra de 10% do varejo da região. Conclui-se que o varejo da região está praticamente dividido igualitariamente entre os estabelecimentos que vendem produtos coloniais e os que não vendem estes produtos; que existe diferença entre o comportamento do varejo dos maiores centros e o da chamada Quarta Colônia; e que mesmo com cerca de 50% dos estabelecimentos não vendendo produtos coloniais na região, a comercialização desses produtos apresenta potencial de crescimento, desde que passe por adaptações. Tanto na escolha dos fornecedores como dos produtos em si, os critérios ligados à qualidade foram apontados pelo varejo como mais relevantes. Mesmo com necessidades complexas, o varejo da região opta por dar preferência por produtos regionais, fazendo com que os produtos coloniais da região tenham potencial de apresentar vantagens competitivas em relação aos produtos oriundos de outras regiões. Detectou-se a potencialidade de produtos que apresentem ações quanto à denominação de origem e/ou rastreabilidade para se colocarem de maneira privilegiada no varejo da região estudada. Por fim, foram identificados três grupos dos produtos mais ofertados pelo varejo da região central do Rio Grande do Sul, sendo que o maior é aquele formado por: pães, mel, vinho branco, salame, ovos, vinho tinto, queijo que são ofertados em mais de 30% do varejo da região.---------------------------------------------This work have purpose delineate the artesanal foods retail in the central region of Rio Grande do Sul, Brazil, face to the importance of that sector and their effects on the productive chains in the region, especially on rural producer. In the methodology, this search was carried out a through a survey accomplished in eleven municipal districts in the central region of Rio Grande do Sul. They were applied questionnaires in 193 commercial establishments, which composed a sample of 10% of the retail of the area. It was concluded that the retail of the area is practically divided equality among the establishments that sell artesanal foods and that don’t sell these products; that difference exists between behavior of the retail in the largest centers and the retail of Quarta Colônia; and exactly that even about 50% of the establishments not selling artesanal foods in the region, the commercialization of those products presents growth potential, since it goes by adaptations. As much in the choice of suppliers as of the products in itself, the linked criteria to the quality were pointed by retailers as more relevant. Even with complex needs, the retail of the area opts to give preference for regional products, doing with that the colonial products of the area have potential of presenting competitive advantages in relation to the products originating from of other areas. The potentiality of products was detected that present actions as for the origin denomination and/or traceability for if they put in a privileged way in the retail of the studied area. Finally, they were identified three groups of the products more offered by retail of the central region of Rio Grande do Sul, of which the largest is that formed by: breads, honey, white wine, salami, eggs, red wine, cheese that are offered in more than 30% of retail in the region.
