Typicité et mode de production: une typicité fermière?

Abstract

Le mode de production fermier, au sens de la production fermiere "indépendante", constitue, de fait, un cadre de contrainte pour la production, qui s'imprime dans les différentes caractéristiques du produit, (et lui confère des caractéristiques spécifiques) pour le consommateur. Le programme "Agro-alimentaire paysan Européen : Caractéristiques spécifiques des produits fermiers", financé par l'Union Européenne (Programme FAIR), a permis d'étudier en détail 14 types de produits fermiers, et leurs équivalents artisanaux et industriels, dans 7 pays européens. On peut parler d'une "typicité fermière", basée sur un mode de production, mais pas forcément sur les particularités d'un terroir. L'étude montre que le consommateur reconnart cette typicité fermière, dans le gout particulier du produit, qu'il apprend à aimer, autant que dans le style particulier de la communication dont l'agriculteur accompagne, consciemment ou inconsciemment, la vente de son produit.
