Abstract

La presente comunicación es resultado de un Estudio Complementario que se está desarrollando en la ciudad de Colonia Caroya, provincia de Córdoba (Argentina) sobre Indicaciones Geográficas (IG) y Desarrollo Territorial Rural con Identidad Cultural (DTR-IC). El trabajo se inserta en el marco de dos proyectos, por un lado, el Proyecto Desarrollo Territorial Rural con Identidad Cultural (DTR-IC) liderado por Claudia Ranaboldo de RIMISP y por el otro, el Proyecto Diferenciación y Valorización de Alimentos con Identidad Territorial del INTA, coordinado por Marcelo Champredonde. El objetivo general de la propuesta es animar y sistematizar lecciones del proceso de construcción y obtención de una IG para un producto típico, el salame de Colonia Caroya. Se espera profundizar respecto a formas de articulación, sinergias y valores agregados en el marco de dinámicas de transformación productiva e institucional vinculadas con el DTR-IC e identificar riesgos y desafíos que encierra el proceso y de los que pueden derivarse lecciones de utilidad para el territorio testigo y el colectivo DTR-IC en América Latina.
