La certification des AOP-IGP: réflexions générales et analyse du cas de la Damassine AOC (Suisse)

Abstract

La reconnaissance de produits en Appellation d’Origine protégée (AOP) ou en Indication géographique protégée (IGP) est généralement perçue comme une opportunité pour les filières traditionnelles en termes d’organisation, de promotion et de marché. Mais cette reconnaissance est liée, dans la plupart des pays, à la mise e place d’un système normatif de contrôle et de certification dont les coûts et les conséquences organisationnelles restent largement ignorés par la littérature scientifique. Nous proposons une réflexion sur ce sujet, à partir du cas de la Damassine, une eau-de-vie AOP provenant d’une petite région de Suisse.
