Entre el estancamiento y la esperanza: la cadena agroalimentaria de la carne vacuna argentina

Abstract

El objetivo de este paper es revisar algunos aspectos de la evolución histórica del complejo agroindustrial de la carne vacuna argentina desde la crisis de la gran industria extranjera a fines de los ’50 hasta la actualidad, donde luego de un prolongado período de estancamiento productivo -que aun se mantiene-, tienden a manifestarse renovadas expectativas estimuladas por la liquidación de la aftosa y la apertura potencial de mercados externos hasta ahora inaccesibles, lo que se reforzaría en caso que en la Ronda del Milenio de la OMC se restrinjan las barreras proteccionistas que limitan el comercio de carnes. En este contexto se analizarán las características definitorias de la cadena cárnica, su larga crisis interna en virtud de la cual en los últimos 25 años el stock ganadero se ha mantenido estable mientras la población crecía un 50%, y el grado de concentración económica al interior de la producción ganadera, la industrialización y la comercialización local y externa.
