Abstract

As Romina finished up her dinner of chicken and potatoes she shared with her husband and their two children, she reflected on how their lives had changed in just over a year. They would never have been able to afford meat before; now they cooked chicken, goat, or pork at least twice a week. Their two children of six and eight years old now attended school every day. They would usually stop by a small store on their way back from school and buy cookies or fruits. They both looked in better health. Her husband was also doing better, drinking and smoking less. In the past year, she had been able to spend money on new clothes, shoes, healthier food, school supplies, and kitchen appliances, which meant that she no longer had to cook on the floor, with her husband occasionally providing a helping hand…
