Abstract

Zusammenfassung Während der Struktur- und Formatwandel im deutschen Einzelhandel in der Wissenschaft aber auch in der Öffentlichkeit seit Jahrzehnten große Aufmerksamkeit erfährt, wurden vergleichbare Entwicklungen in der Gastronomie bislang relativ wenig beachtet. Das gilt auch für Wirtschaftsförderung und Stadtmarketing, die die Gastronomiebranche häufig nicht als Aufgabenfeld angesehen haben. Dies scheint sich in Folge der COVID-19-Pandemie verändert zu haben. Die massiven und kurzfristigen Auswirkungen auf die Gastronomie führten dazu, dass die Lokalpolitik vielerorts das Thema Gastronomie für sich entdeckte und Wirtschaftsförderungen sowie Stadtmarketing schnell Maßnahmen zur Förderung einer Branche im Krisenmodus entwickeln und umsetzen mussten. Basierend auf diesem Trend wird in diesem Beitrag diskutiert, warum sich Wirtschaftsförderung und Stadtmarketing mit der Gastronomie beschäftigen sollten und welchen Beitrag die Wirtschaftsförderung leisten kann, um die lokale Gastronomie resilienter zu machen. Dabei wird das Konzept der organisationalen Resilienz der Analyse zugrunde gelegt. Die empirische Grundlage des Kapitels besteht aus einer quantitativen Befragung von 623 Gastronomiebetrieben und 46 qualitativen Interviews mit Geschäftsführer:innen und Inhaber:innen von Gastronomiebetrieben sowie verschiedenen Expert:innen.
