Zukunftsorientierte Geschäftsmodelle für die klassische Bäckerei in Österreich

Abstract

Zusammenfassung Das Gewerbe der österreichischen Bäckereien, welches aus klassisch geführten Bäckereien, mittleren und großen Filialbäckereien, großen und auch international agierenden Industriebäckereien sowie Lebensmittelhandelsketten besteht, unterliegt gegenwärtig einem wirtschaftlichen Strukturwandel. Die jährliche Studie der KMU Forschung Austria – Zahlen, Daten, Fakten – bestätigt diese Entwicklung und belegt einen negativen Trend der registrierten Bäckerunternehmen (siehe Abb. 1). In den Jahren zwischen 2005 und 2020 hat sich die Anzahl der Bäckerunternehmen in Österreich fast um ein ganzes Drittel reduziert.
