Abstract

Zusammenfassung Ein Blick in den Statista Branchenreport für Gastronomie 2015(Grundlage und Quellen für den Branchenreport Gastronomie der Statista GmbH sind Ergebnisse und Werte von: Statistisches Bundesamt, Deutsche Bundesbank, Bundesagentur für Arbeit, Statistisches Amt der Europäischen Union (Eurostat), Allgemeine Hotel- und Gastronomiezeitung, DEHOGA, Deutscher Industrie- und Handelskammertag, Deutscher Tourismusverband, Wirtschafts-Woche, Internationaler Währungsfonds) identifiziert einige strukturelle Besonderheiten des Gaststättengewerbes. Die Marktstruktur weist demnach eine starke Fragmentierung auf. So dominieren Kleinstbetriebe mit weniger als zehn Beschäftigten.
