Abstract

The SoyFoods case describes a set of situations related to the main purchasing and supply management (PSM) decisions. It is based on real company data, anonymized, and it presents the genuine challenges encountered by an Italian food company operating in the vegetable alternatives sector, where the supply market presents several criticalities. The case is structured in three parts for three learning sessions to cover the main PSM concepts, i.e., financial impact of procurement, make-or-buy decisions, spend analysis and classification, and supplier performance evaluation. Thus, the case can be applied in a modular way encompassing various PSM concepts, according to the teacher/ class needs.
