Evaluation and Producers’ Attention to Ratings in the Chocolate Confectionery Markets

Abstract

Since 1988, a specialised guide (Guide des croqueurs de chocolat) has rated producers of chocolate confectionery in France according to consistent quality standards. In doing so, it presents a market based on these standards. When producers do pay attention to the guide’s ratings, it is mainly in order to criticise the procedures on which they are based, to disregard them when they are unfavourable, or to try to control them by playing on the meanings that may be assigned to them in territorially circumscribed markets.
