Abstract

The business model for the appropriate technology innovation in Cakalang Fufu processing is comprehensively integrated within the Teaching Factory framework at Politeknik Negeri Manado. This initiative leverages on-campus laboratory facilities to carry out production activities under a Project-Based Learning (PBL) approach, actively involving faculty members and students in real-world, industry-relevant experiences. The production capacity is strategically planned to grow from 18 units in the first year to 45 units by the fifth year, aligning with market expansion targets. With an estimated production cost of IDR 180 million—approximately 20% below prevailing market prices—the product offers distinctive competitive advantages through innovative features such as IoT-based monitoring, solar panel energy utilization, and a specialized smoking system using eco-friendly coconut-shell briquettes. This cross-disciplinary collaboration enhances operational efficiency, strengthens market competitiveness, and ensures industry relevance. Strategic resource optimization, targeted marketing, and business development initiatives further reinforce the scalability and sustainability of this business model.
