"Consumer Preferences and Willingness to Pay for Prepared Dishes: an Economic Analysis of Taste, Safety, and Traceability in Urban China

Abstract

The prepared dishes industry has gained significant attention due to its convenience and growing consumer demand, particularly in urban areas, However, concerns about food safety, traceability, taste, and packaging have influenced consumers’ attitudes and willingness to pay for these products. This study investigates the preferences, attitudes, and behaviors regarding prepared dishes in tier-1 and tier-2 cities in China, focusing on the factors such as taste, safety and innovation. Using a hybrid approach combining grounded theory, discourse analysis, and thick description, the research analyzes data collected from in-depth interviews, focus group discussions, and semi-structured questionnaires, followed by concerns about food safety and traceability. The findings reveal that taste is the primary factor influencing consumers’ willingness to pay, followed by concerns about food safety and traceability. Younger consumers prioritize convenience and flavor, while older demographics emphasize health and ingredient quality. The study also highlights the role of government regulations and effective marketing strategies in shaping consumer trust and acceptance of prepared food. By providing a comprehensive understanding of consumer preferences, this research offers theoretical guidance for the future development of the prepared dishes industry, emphasizing the need for improved safety standards, transparent traceability systems, and innovative product offerings to meet diverse consumer needs.
