Sikeres üzleti modellek a kézmûves csokoládéiparban

Abstract

Magyarországon az elmúlt tíz évben növekvõ fogyasztói igény mutatkozik a kézmûves termékek irányába, amelynek a szembetûnõ bizonyítéka, hogy egyre több kézmûves manufaktúra, illetve ezen területen mûködõ vállalkozás jelenik meg országszerte. A csokoládé ágazatban is megjelent a fogyasztói igény a magas hozzáadott értékekkel bíró termékekre és az így kialakult piaci rés azt eredményezte, hogy megjelentek a kézmûves csokoládét gyártó kis- és középvállalkozások. Ez az üzletág az elmúlt években dinamikus növekedést tudhat maga mögött és ígéretes jövõ elõtt áll, mivel ezen termékek felé irányuló kereslet folyamatosan növekszik. Kutatásunk célja, hogy megvizsgáljuk a kézmûves csokoládé üzletágban tevékenykedõ vállalkozások üzleti modelljeit, feltárjuk a kézmûves csokoládé üzletág ellátási láncában található szereplõket, valamint elemezzük a szerepeiket és a közöttük megvalósuló különbözõ versenyhelyzeteket és terjeszkedési lehetõségeiket az ellátási láncban
