Abstract

Esta investigación busca contribuir a profundizar la comprensión sobre los impactos del "boom gastronómico" y sus posibilidades de sostenibilidad . Se trata de un análisis basado en estudios de caso con los límites inherentes de este tipo de aproximación. Empero, esta opción fue tomada con el objetivo de contribuir con evidencia empírica sobre el tema, pues la revisión de la literatura refleja que existen insuficientes datos sobre el desarrollo del boom gastronómico en el Perú.
