Abstract

El autor establece una visión general sobre la geografía vinícola mundial, pero en particular sobre la suramericana, y plantea además una visión realista de la historia, el desarrollo y la producción vinícola colonial, así como de los orígenes de la producción actual en varios países suramericanos. De igual manera, ofrece teorías y principios básicos para permitirle al estudioso del tema desarrollar degustaciones y catas comparadas, dirigidas a identificar los vinos y sus cualidades o defectos, y así propender por la práctica de las técnicas de servicio de los vinos.
