Abstract

El sector lácteo español tiene una relevancia estratégica dentro del sistema agroalimentario por su importancia económica, su arraigo social y su contribución al bienestar y salud de la sociedad. Este trabajo analiza la estructura empresarial de las explotaciones lácteas en España, evaluando la relación entre el tamaño de las explotaciones y sus resultados económicos medidos a través de indicadores como rentabilidad, liquidez y endeudamiento. También se examina el impacto de la forma jurídica, distinguiendo entre entidades de economía social (Cooperativas y SAT) y sociedades mercantiles (S.A. y S.L.), así como la influencia del tipo de ganado (vacuno, ovino y caprino). El objetivo es identificar modelos de gestión más eficientes y apoyar el diseño de políticas públicas que impulsen la sostenibilidad y competitividad del sector.
